Slow Cooker Monday: Chickpea Curry

This is an easy and healthy vegetarian dinner you can spend a few minutes prepping the night before (chopping all the veggies), cook for a few minutes in the morning, and let your Crock Pot do the rest. Feel free to add different vegetables to suit your family’s preferences.

You’ll come home to a fragrant cloud of Indian spices. Cook up some quick rice and dinner is served.

 

Recipe:

Slow Cooker Chickpea Curry

  • 2 T olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch of ginger, peeled and minced
  • 1 carrot, peeled and sliced
  • 1 bell pepper, chopped
  • 1 15-oz. can chickpeas, drained and rinsed
  • 2-3 t curry powder
  • 1 t salt
  • 1/2 t garam masala

In a small skillet, cook onion, garlic and ginger in olive oil until soft. Place in slow cooker with the remaining ingredients except garam masala. Cook on low for 6-8 hours. Stir in garam masala.

      Adelina – you could definitely use raw beans, soaking them overnight first.

    I love the idea of coming home to a home scented with the smells of a beautiful curry. Yum! This is a great way to put a slow cooker to good use.

    Love the sound of this dish. I can’t get enough of chickpeas or curries or any sort. I would have to add a bit of chicken or something to make the man happy but this dish sounds awesome to me!

    We made this for dinner today. Everyone liked it, even my picky son who was pleasantly surprised. Next time I need to double it.

    Looks great! I just assembled and its cooking in the slow cooker! I’ll report back in 6 hours! I keep thinking I forgot a liquid or something but recipe doesn’t call for any so I’m good to go!

    The photo looks like it has tomatoes in it but the recipe doesn’t call for any. Did you add tomatoes?

      Cindy, that’s cooked bell pepper, not tomato.

      Thanks Pip! I made it in a 3 quart slow cooker. You could also double the recipe and make it in a larger one.

    I made this tonight and it seems really dry. I threw a little water in with it do it wouldn’t burn, some pieces against the sides still burned since I didn’t add much liquid. Do you ever add liquid?
