Beer Float Popsicles

If you follow me on Instagram, you may have seen a fun collage on my feed last Friday. We often have fun treats at our monthly team meetings, and this time my coworker Erika had a great idea – beer floats! She brought in some chocolate stout and we poured it over vanilla ice cream. Easy peasy and SO good. I actually don’t really like beer, but I loved this! (Go figure, add chocolate to beer and pour it over vanilla ice cream and it agrees with me ;))

It was great timing – I had a container of Tillamook Old Fashioned Vanilla in my freezer just waiting to be used. I was originally going to just make root beer float popsicles, but I had to give beer float popsicles a try. I tried plain stout and ice cream, like we did with the floats, but found the beer to be too strong and tasted slightly bitter. Instead, I cooked it for a few minutes with a little bit of sugar to take the edge off – much better.

These are most definitely grown-up popsicles. They have an incredible rich, deep flavor, with hints of chocolate and almost a coffee flavor. Plus, the vanilla ice cream adds a creamy richness to the pops – similar to a creamsicle, but with a chocolate stout flavor instead of orange of course.

Here’s how to assemble stout float popsicles:

Fill your popsicle mold with 2 tablespoons of beer. Add vanilla ice cream, pushing it down the mold gently, until they’re almost full, leaving an inch of space at the top.

Slowly pour in a tablespoon or 2 of beer on top (you may need to take breaks if it foams up a lot). Insert a knife or the handle of a spoon inside each mold and gently stir to mix everything up a bit. Add more beer if you have space.

Once the popsicle molds are full, insert sticks and lid. Freeze for a few hours, until fully frozen, then enjoy.

Stout Float Popsicles

Ingredients

  • 1/2 cup chocolate stout
  • 2 teaspoons sugar
  • Vanilla ice cream, slightly softened

Instructions

  1. In a small saucepan, stir together beer and sugar. Bring to a boil, reduce heat, and simmer for 2 minutes. Set aside to cool.
  2. Once cooled, fill your popsicle mold with 2 tablespoons of beer.
  3. Add vanilla ice cream, pushing it down the mold gently, until it’s almost full, leaving an inch of space at the top.
  4. Slowly pour in a tablespoon or 2 of beer on top (you may need to take breaks if it foams up a lot).
  5. Insert a knife or the handle of a spoon inside each mold and gently stir to mix everything up a bit. Add more beer if you have space.
  6. Repeat until all popsicles molds are full, insert sticks and lid. Freeze for a few hours, until fully frozen, then enjoy.
