Chocolate Nutella Cupcakes

Hey, remember when I said I’d be posting healthy recipes in July? Ha! Since then I’ve shared recipes for mojito popsicles, chocolate cupcakes, blood orange sorbet, and now chocolate Nutella cupcakes (also, next up: carrot cake cupcakes). So, lesson learned: don’t listen to me and don’t expect anything healthy when you visit this blog!

These cupcakes were made in honor of my 300th Facebook fan, Rachel. I actually know Rachel – she was my student intern last year. I knew she was a big fan of my desserts so to celebrate hitting a big number on Facebook, I decided to bake her something special. She asked for cupcakes and told me that she likes chocolate and Nutella.

I took the “better than sex” chocolate cupcakes (think moist, very chocolatey cake) and topped them with my own Nutella buttercream. Other recipes use a little Nutella with more butter and powdered sugar, but that just didn’t do it for me. I ended up using that entire jar that’s in the photos. It was perfect: creamy, thick frosting with the distinctive flavor of the hazelnut chocolate spread. I ate one (you know – just to make sure they were okay) and was in chocolate/Nutella heaven. Good thing I had these earmarked for someone else – I could’ve eaten them all!

Recipe:

“Better than Sex” Chocolate Nutella Cupcakes

Adapted from Cupcake Project and Chockylit
Makes 15-16 cupcakes
Edited to add: some people rave about this recipe, yet some have issues with them deflating. I can’t figure out what the issue is, so I’m on the hunt for the ultimate chocolate cupcake recipe to replace this one. I made the Nutella buttercream with cinnamon chocolate cupcakes and it was SO delicious! 
  • 1/2 C butter, room temperature
  • 1 1/4 C sugar
  • 2 large eggs, room temperature
  • 3/4 C flour
  • 1/2 t baking powder
  • 1/4 t baking soda
  • 1/4 t salt
  • 1/2 C unsweetened cocoa powder
  • 1/2 C milk
  • 1 t vanilla

Preheat oven to 350°F.

In a mixing bowl, beat butter until softened and smooth. Add sugar and beat for a few minutes, until light and fluffy. Add eggs one at a time, beating after each until well combined. Set aside.

In a small bowl, combine flour, baking powder, baking soda, salt and cocoa powder. In a separate small bowl, combine milk and vanilla.

Add about 1/3 of dry ingredients to butter and sugar and mix until combined. Add about 1/2 of wet ingredients to butter mixture and mix until combined. Continue alternating dry and wet, mixing in between (finish with the remaining dry ingredients).

Fill cupcake tins about 1/2 full (don’t overfill – you only need 1/2) and bake for around 20-25 minutes, until a toothpick inserted in center comes out clean. They will come out flat.

 

Nutella Buttercream

  • 1/2 C butter, room temperature
  • 1 C Nutella
  • 1 C powdered sugar, sifted
  • 1-2 T milk

Beat butter until smooth. Add Nutella and beat together until thoroughly combined. Slowly add powdered sugar, mixing until combined. Add 1 tablespoon of milk. Add additional milk or powdered sugar as needed to reach desired consistency.

      @apaler1 – who doesn’t love Nutella?! This frosting is amazing because it tastes just like Nutella but with the texture of a perfect buttercream. Definitely a must-try for a Nutella lover.

    Thank you Stephanie for baking these for me! They were amazing! Not only did I love them but my roommate, Mom, and brother also really enjoyed them. I think if I made these myself I would end up eating the entire bowl of frosting before any of it made it to the cupcakes. They truly were chocolate/Nutella heaven!

      @Anne – not silky at all! I almost always use unsalted butter when I bake and I recommend that you do for this recipe.

    These ‘better than sex’-cupcakes are really that. I tried them yesterday, and they were heavenly.     I’m sorry to ask but do you have the conversions in grams? When I use cups they aren’t accurate and the cupcakes I make always end up rock – hard ):

      @Valene – I don’t have the conversions. Maybe you can figure it out by using a conversion chart. If your cupcakes turn out hard, it could be from your oven being too hot. You could get an oven thermometer so you can ensure it’s the correct temperature. Good luck!

    I tried these last night – the cupcakes were a little dry i wonder if oil will be better than butter in this case.
    The frosting was delicious! i used only half a cup of powdered sugar and it was perfect!!

    Hi, I just made the cupcakes and for some reason that I dont know they came out awful. The taste was amazing as well as the buttercream, but they just dripped inside the oven.
    Do you have any idea why this happens?
    I live in Mexico City and I dont know if the altitude over here has something to do with this.

      @Dianae – they dripped? I’m not sure what you mean exactly, but altitude can affect baking. This recipe seems to have mixed results and no one can figure out why. It seems to either be amazing or a mess. I think I’ll add a warning to the recipe so people know that without reading the comments.

    I just made this recepie it was so good!!!! I only wonder if others had trouble with the frosting I had to put almost three cups of powered sugar to get the nutella frosting to be thick enough to handle. Is there any tips for this? Other than that I’m in love with this cupcakes

      @Sarah – I just edited the post to add a warning. Although some people have raved about this recipe, some have issues with the cupcakes collapsing. I can’t figure out why it goes so well for some but not for others. I’ve made it a few times with no problems myself, as has Stef at Cupcake Project, but she has also had some readers who have complained it hasn’t worked for them. I’m on the hunt for the ultimate chocolate cupcake recipe to replace this one…I’ll let you know what I find out!

    I made these in a single batch the first time and they were amazing. The next two times I tried to double the batch and they absolutely flopped. Caved in the middle and not edible. Any idea why this happened when doubled?

      @Charlotte – yes, it would be fine to make this the day before eating. If you frost it and leave it in the fridge overnight, take it out of the fridge around 20 minutes before eating to let the frosting soften. Let me know if you have any more questions. Enjoy!

    I just made a batch of these and they were amazing! I’m eating one as I type this!
    Usually, I’d half frosting recipes but for this, I actually thought of doubling it!
    I love how the cake is so light, soft and not overly sweet (though it was a tad crumbly), and the frosting was the real star. Rich, decadent, nutella-y and I love the way it hardened after a while.
    Best chocolate cupcake!!
    Can this recipe be made into a full on layer cake?

      @Sheila – so glad you enjoyed the cupcakes! That’s one of my favorite frosting recipes. You could make this into a layer cake. You might want to double the recipe, depending on how big you want the cake to be.

    When it says add the 1/3 dry ingredients and the wet ones do you add it in the butter and sugar?

      @Yelena – yes, you add 1/3 of the dry ingredients from the small bowl to the butter and sugar. Then add 1/2 of the wet ingredients from the other small bowl to the butter and sugar. Alternate until you empty the small bowls.

      @Danielle – I would probably start testing it around 25 minutes. 8″ cakes take around 25-35 mins generally.

    Hi how much is 1/2 cup of butter weighing in grams? Sorry if I sound silly. As normally we weigh thinga in grams instead of cup.

    I just tried making these today for my girlfriends birthday in a couple days and I have no idea what happened but they didn’t turn out so great )= half the ones in the oven started shriveling up or sinking in and the others seemed alright but when i tried one they were kinda hard and bitter I guess? I dunno what I did wrong D: I followed your recipe exactly though! Maybe its cause of the cocoa powder I used? All i had was Hersheys unsweetened cocoa powder.

    Help her birthdays in two days and I need to work something out )=

    The frosting was brilliant though!

      @toj – I’m sorry to hear that! As I mentioned in the recipe notes, some people rave about this recipe, yet some have issues with them deflating. I can’t figure out what goes wrong for some of you. I made the Nutella buttercream with cinnamon chocolate cupcakes, which was divine. If you want a plain chocolate recipe though, try this one – just use regular all-purpose flour in place of gluten-free and take out the xanthan gum.

    Made these tonight and although they are delicious, we too are one of the unlucky ones whose cupcakes deflated. Have you been able to discover why?

    I just want to share with you my opinion. I made only frosting from this recipe, because I didn’t have all the ingredients and we needed some chocolate cupcake! 😀 So I’ve found different one with ingredients I had. I liked the recipe of the frosting, but I think it doesn’t need so much sugar. I used like half of it. 🙂 It’s pretty tasty, though!!! Thanks! 🙂

    My first attempt at these cupcakes was disastrous…they over-rose, over-flowed and left pitiful holes in the cupcakes…more like cakecups. I figured out my more then 4200ft altitude was the culprit…made them again with high altitude adjustments and they were BEAUTIFUL and delicious. Those that had these cupcakes “sink” on them might be at a higher altitude then they think. Just a thought….Thanks for sharing your recipe!

    Perhaps the problem people are having is that they’re using S R flour as well as the other raising agents? That would cause deflation, surely! Neeeed to make these.

    You must be having the worst sex in the world. These weren’t cupcakes at all…they were just a made-up batter that destroyed my pans and my oven. As I was pouring these into the muffin cups, I was thinking, “This doesn’t seem like enough flour to make a cake-like treat.” I checked the recipe again. Well, I did what it said. I figure if you’ve got a recipe posted up on here, they must be good. Uh, no. I have baked on batter all over everything in my oven. Now my boyfriend will be over it 10 minutes and he will have no birthday cupcakes. 🙁 I wish there was a place to post a picture here so you can see what an absolute disaster these were. “Collapse” isn’t even the right word.

    I apologize. After having a complete kitchen disaster with your cupcake recipe, I googled the interwebs for another recipe, with maybe a higher flour content, and proceeded to make attempt #2 at getting some birthday cupcakes together…in the bottom oven, since the top oven was a mess. I had the same results. Complete mess. Cupcake batter everywhere.
    Well, I am at 7000 feet. So today, after cleaning out both ovens, and scraping the concrete batter off all my muffin tins, I bought some Duncan Hines from the store and followed the high altitude directions. They actually resemble cupcakes. Hallelujah.
    Sorry for my harsh message earlier. After two completely different recipes having the same effect, I realized the fault may not have been with you. :-/

    Thank you, thank you , thank you for this recipe! The nutella buttercream frosting was SO delicious and the perfect consistency to pipe onto the cupcakes. Just the right amount of powdered sugar so the frosting wasnt overly sweet. Your recipes are always spot on and always a hit when I serve them. Thanks again!
